Lifestyle Chatter: Free From Buckwheat Soda Bread

Today’s little bit of healthy lifestyle goodness comes in the form of a bit of a halleujah moment, for I have realised that bread is not lost! It’s now just over a week since meeting with a lovely nutritional therapist which has resulted in me giving up gluten and yeast and whilst I’m really enjoying cooking and discovering a love for the kitchen, bread has been a painful absence.

We’re adjusting to preparing dinners in advance and eating much healthier as a result, I haven’t got my head around workday lunches yet and am so used to popping to any of the many eateries around my office location by London Bridge. In fact we’re directly above a Pret and lunch has always been popping downstairs for a sandwich or baguette *sob*.

Thankfully both Instagram and Pinterest have come up trumps as always for inspiration and when I saw this soda bread recipe from Lizzie Loves Healthy, it looked perfect for a total bread-making novice. Yes! At the grand old age of 35 I have never tried making bread before. Well, maybe in a long-forgotten Home Ec class back in the early 90s but definitely not since then.

When people have been talking to me about being gluten intolerant in the past few days, the general response is that it’s much easier now since there are so many gluten free products on the market, which is definitely true. However, many of them are ruled out for me as they contain yeast which I’m also allergic to and I’m making a conscious decision now to try and avoid as many processed foods as possible and gluten free foods tend to over-compensate with lots of other nasties.

So armed with a whole host of new ingredients such as gluten free plain flour, gf oats and buckwheat flour I decided to tackle the bread at the weekend. And it worked a treat! It’s got a super crunchy crust and cooked through beautifully with the oats adding a bit of texture too. Next time around I’ll make it with butter instead of coconut oil (there was the option of either) just because whilst I love any bread, the coconut oil is a slightly too strong sweet taste in my opinion.

Now its worked so well I’m full of confidence to try many other recipes and am embracing my new natural and healthier lifestyle as much as possible.

    Oh that looks so yummy! You’re right that coconut oil does have a coconutty taste. However, most coconut oils sold are the extra-virgin ones, and that’s probably what you’ve got. There is a cheaper alternative, called cuisine or cooking coconut oil and it doesn’t have a coconut taste at all. I use it to roast root veg all the time and never notice it!
