This week has been so fun, relaxed, following my determination to appreciate more of the little things in 2016. I’m never one for needing reminding that life is short and you have to embrace every day, but the sad news of people in the public eye passing away is a stark reminder that we are but visitors. So this week has been about appreciating the weather, from crazy amounts of rain, beautiful early morning sunshine and the lightest sprinkling of snow just reaching out little pocket of south London on Sunday morning.
Pete has been in the second week of his Men’s Health 3 month transformation so I’ve been flying solo on the cooking front for lunches and dinners, making healthy vegetarian chillis, trying out my Nutribullet again and indulging in gluten free goodies from the Crystal Palace Food Market. I spend Sunday afternoon clearing up some leftovers and turning them into the tastiest soup of sweet potato, squash, peppers, chilli, garlic, mustard, parmesan and double cream. I’ll have to blog the recipe as it may just be one of the tastiest soups I’ve ever had.
I also rediscovered my “happy” jumper, bought years ago in Dublin for the bargain price of 20 euros, this jumper always makes people smile when they see it because it’s er, rather lurid. Post Pilates on Thursday, my sore muscles were soothed in a relaxing bubble bath and on my way to work on Friday I indulged in a white hot chocolate which was the perfect start to a chilly morning. One of the reasons I’ve been trying to prep more food is to budget better during the week so I now try to take my lunch Monday to Thursday, leaving Friday free for little treats if I fancy them.
I’ve realised that seeing happiness in the smallest things mean I appreciate the start of my working week far more positively than I ever used to and that in itself makes a massive difference. Hope you’ve had a lovely week.
